Delicious and nutritious… I’m saying YES!!!


  • 200 g cashew nuts (soaked in warm salty water),

  • 150 g dried pitted dates (soaked in warm water),

  • 2 tbsp chia seeds,

  • 4 tbsp almond butter,

  • 2 tbsp of organic cacao powder,

  • 4 tbsp of melted coconut oil,

  • a pinch of sea salt,

  • 5 tbsp dessicated coconut.


Soak cashews and dates for a minimum of 30 minutes (cashews ideally for a few hours). Drain and rinse the cashews, and blitz in food processor, then add the drained dates and the rest of the ingredients, except dessicated coconut. Blend it all until smooth and put in the fridge to chill for a minimum of 30 minutes. Form the mixture into little balls (about 3 cm in diameter) and roll them in dessicated coconut. The amount of ingredients should provide you with about 25 balls. Keep them in the fridge, or freeze some of them for later, but remember not to eat too many of them in one go #challengeoftheday
