As you probably noticed all my recipes are clean, nutritious and most importantly quick and easy to make. This one is no exception. Delicious dinner ready in 30 minutes (and most of this is waiting time - not making time ;-)
1 tbsp coconut oil,
3 garlic cloves,
500 g turkey mince,
1 tsp turmeric,
1 tsp cumin,
1 tsp ground coriander,
400 g can of coconut milk,
1 bag of spinach (200 g),
brown basmati rice and side salad to serve.
Stir fry pressed garlic and chopped onion in coconut oil. After few minutes add turkey mince and lightly fry for about 10 minutes, until the meat doesn’t look raw any more. Add spices and coconut milk, cover and cook for about 10 minutes. At the end add spinach and again cover and cook around 5 minutes.
Serve with the rice and side salad.
