This is a variation of my favourite chicken avocado salad, that I came up with spontaneously and it turned out to be absolutely delicious!
It took about 10 minutes to make, simple and tasty and most of all made of real food 💗
INGREDIENTS (Makes about 3-4 portions):
- 225 g chicken mini fillets (spiced with some chicken seasoning and cooked for about 7 minutes in health grill),
- 1 cup of cooked quinoa (leftover from the yesterday's dinner),
- 1 avocado,
- 200 g baby plum tomatoes,
- 2 oranges.
Cook the chicken in the health grill for about 7 minutes, when it's done chop it into 2 cm cubes. Chop the avocado and cut the baby plum tomatoes in half. Peel the oranges and cut them into little pieces. Finally mix all the ingredients together and enjoy!
