I had this delicious soup for lunch today, with at least 3 portions of veggies in one serving! And... all three of my kids loved it!!!
➡️ 2 tbsp coconut oil,
➡️ 4 garlic cloves,
➡️ 1 large onion,
➡️ 4 leeks,
➡️ 3 broccoli heads,
➡️ 1.5 l vegetable stock,
➡️ 250 ml full fat coconut milk,
➡️ juice from 1 lemon,
➡️ salt and pepper to taste.
Press garlic and chop onions and leeks. Saute in coconut oil for about 5 minutes, add broccoli and saute for another 5 min. After that pour in the stock, cover and simmer on light heat for about 10-15 minutes. Once the veggies are soft, turn off the heat and add coconut milk and lemon juice, blend everything together with a hand blender.
I love to serve it with hard boiled eggs, for added protein boost 💪
