BLACK BEAN VEGAN BURRITO Recipe. Super quick LUNCH/ DINNER idea!

Couldn’t be easier to make, delicious and colourful lunch/ dinner idea, full of veggie goodness, a perfect meatless plate.

 

INGREDIENTS:

  • 2 tbsp coconut oil,

  • 4 garlic cloves pressed,

  • 1 onion chopped,

  • 1 large carrot grated,

  • 120 g sliced spring greens,

  • 1 x 400 g can chopped tomatoes,

  • 1 x 400 g can black beans rinsed,

  • 1 tsp dried basil,

  • 1 tsp dried oregano, 

  • sea salt, black pepper,

  • brown rice and side salad to serve.

METHOD:

 

Lightly saute garlic, onion, carrot and spring greens in coconut oil, for about 8-10 minutes. Add chopped tomatoes, black beans and spices. Cover and cook on low for about 15 minutes. Serve with brown rice and side salad.
