New recipe right on time for #WorldVeganDay celebrated by vegans around the world on 1 November. I came up with this recipe when I had some quinoa left over from making a salad the other day. It turned out delicious, especially in combination with the fresh taste of cucumber salad.
Rinse and cook quinoa with a little sea salt. Cut sweet potatoes into chunks and steam for about 10 minutes, so that you are able to mash them with a fork. Chop the onion and stir fry in a teaspoon of coconut oil. Once everything cools down a bit, mix with eggs, cinnamon, coconut flour and a pinch of sea salt. In a large pan heat up a tablespoon of coconut oil. Form the mixture into patties, just like you would form the burgers. Fry for about 7 minutes undisturbed, then turn and repeat on the other side.
