CHICKEN & BEANS STEW - easy dinner recipe (Gluten free/ Dairy free)

Another great dinner idea. Easy to make and only whole ingredients. 

 

INGREDIENTS:

  • 1 tbsp ghee,

  • 1 onion,

  • 600 g organic Chicken thigh fillets (without skin),

  • 1 Red Ramiro pepper,

  • 400 g can of butter beans, 

  • 500 g tomato passata,

  • 2 tsp Gram Masala spice blend,

  • Fresh basil leaves,

  • rice/ rice noodles/ mashed potatoes and side salad to serve.

 

METHOD:

Lightly fry chopped onion and chicken pieces in ghee for about 10 min. Add chopped Ramiro pepper, drained and rinsed butter beans, passata and spices. Cover and cook on low heat for about 30-40 min. At the end add fresh basil leaves. Serve with rice/ rice noodles or mashed potatoes and side salad.
