The Best PALEO Banana Cake RECIPE (Gluten Free, Dairy Free)

This is the recipe I created after trying many different ones and none of them was perfect... all I can say is that it's the best banana cake I've ever had and super easy to make!

INGREDIENTS: - 4 eggs, - 4 mashed bananas, - 1/4 cup melted ghee or coconut oil, - 4 tbsp honey (optional), - 1 cup ground almonds, - 1/2 cup coconut flour, - 1 tsp cinnamon, - 1 tsp baking powder, - 1 tsp bicarb soda, - 1/2 cup raisins soaked in hot water, - 2-4 tbsp brown rice milk / almond milk (if the mixture is too thick). METHOD: Mix the eggs, bananas, ghee and honey together, then add the combined dry ingredients and quickly stir it all together, adding raisins at the end. If too thick add some milk substitute. Bake 30-35 min at 175C.
