I'm making sauerkraut today. Store bought version is often pasteurized, which means that all the good bacteria is gone! Homemade sauerkraut is very easy to make and should be ready within 5-10 days, depending on how warm it is in your house and how sour you want it to taste.

'Fuss-free' means that they are easy to make, but also that kids love them, no fussing about 😋 It's a big batch, will serve family of five over two days! Or you can freeze the leftovers if you wish.

INGREDIENTS:

➡️ 1 kg of turkey thigh mince,

➡️ 5 leeks chopped,

➡️ 2 eggs,

➡️ 1 tsp of dried basil,

➡️ 1 tsp of dried oregano,

➡️ salt and pepper to taste,

➡️ 2 x 400 g tin of chopped tomatoes,

➡️ 4 garlic cloves pressed,

I had this delicious soup for lunch today, with at least 3 portions of veggies in one serving! And... all three of my kids loved it!!!

INGREDIENTS:

➡️ 2 tbsp coconut oil,

➡️ 4 garlic cloves,

➡️ 1 large onion, 

➡️ 4 leeks,

➡️ 3 broccoli heads, 

➡️ 1.5 l vegetable stock,

➡️ 250 ml full fat coconut milk,

➡️ juice from 1 lemon,

➡️ salt and pepper to taste.
