Another great idea for a meatless Monday. However this is a big batch, so it will also be a meatless Tuesday ;-) 

INGREDIENTS:

  • 500 g new potatoes,

  • drizzle of olive oil,

  • 2 large onions chopped,

  • 1 tbsp coconut oil,

  • 500 ml tomato passata,

  • 400 ml can coconut milk,

  • 2 tsp cumin,

  • 2 tsp turmeric,

  • 2 tsp ground coriander,

  • 0.5-1 tsp mild chilli powder,

  • 2 small aubergines cut into 1 cm cubes,

  • 400 ml can black beans drained and rinsed,

  • 150 g spinach,

As you probably noticed all my recipes are clean, nutritious and most importantly quick and easy to make. This one is no exception. Delicious dinner ready in 30 minutes (and most of this is waiting time - not making time ;-)

INGREDIENTS:

  • 1 tbsp coconut oil,

  • 3 garlic cloves,

  • 1 onion,

  • 500 g turkey mince, 

  • 1 tsp turmeric,

  • 1 tsp cumin,

  • 1 tsp ground coriander,

  • 400 g can of coconut milk,

  • 1 bag of spinach (200 g),

  • brown basmati rice and side salad to serve.
