When I am running out of time and I need quick lunch, this is my go to recipe, as it takes less than 5 minutes to make.

INGREDIENTS:

  • 1 can (120g) of tuna in brine (drained),

  • 1/4 of cucumber chopped,

  • 1 small leek chopped,

  • 2 tbsp of hummus (I use ready made hummus, Tesco Organic is my favourite one as it contains only good ingredients).

METHOD:

Couldn’t be easier, just mix everything together and enjoy.

I came up with this recipe because my kids love carrot juice… and after juicing all these beautiful organic carrots and oranges, it was a pity to keep throwing away all the pulp. 

Here comes the solution! This carrot cake is a great way of using the juicing pulp. It is deliciously moist and packed full of fibre, which is always a good thing. 

INGREDIENTS:

- 4 eggs,

- 1/4 cup melted coconut oil,

- 4 tbsp honey or maple syrup,
